The property :
The origin of the property is very old. The vines were cultivated on the slopes of what is now Château Pavie as early as the 4th century.
Owned by Chantal and Gérard Perse since March 1998, Château Pavie, 1er Grand Cru Classé "A", has one of the most beautiful terroirs of Saint-Émilion.
Château Pavie is known for the structure and elegance of its wines resulting from a harvest contained in the yields most suited to the terroir: 29hl/ha.

The vineyard :
The vineyard of Château Pavie is made up of a single block of 37 hectares, which makes it one of the largest Premiers Grands Crus Classés of Saint-Émilion.

Located in the south-east of the hill of Saint-Emilion, the vineyard is spread over three levels going up the hill, with vines aged 48 years on average. The "plateau" (85 meters above sea level) is composed of clay-limestone soil and the "middle of the hill" (55 meters above sea level) is composed of brown clay-limestone soil with a fine texture. The "foot of the hill" is composed of sandy / sandy-clay soils with iron dross between 60 and 80 cm and sandy-gravel soils.

Special attention is paid to the vineyard, part of which has been the subject of a replanting plan including the raising of the trellis to increase the leaf surface, specific pruning according to the age of the vines, thinning and leaf removal.

Vinification and maturation :
The grapes are harvested by hand and then sorted. The harvest is then placed in 21 temperature-controlled wooden vats. Following a 38-day vatting period, malolactic fermentation is carried out in barrels, as is the maturing process. The distribution is 80% new barrels and 20% barrels of one wine.

Blend :
This 2019 Château Pavie is a blend of Merlot (50%), Cabernet Franc (32%) and Cabernet Sauvignon (18%).
