Vinification :
Manual harvest from September 18 to October 4. Plot selection. Manual sorting. Thermo-regulated vatting. Traditional alcoholic fermentation in inverted truncated cone vats. Vatting time of 28 days. Soft extraction. Maceration protected from the air.
Maturation :
Aged for 16 months in barrels. 65% new barrels, 35% ageing vats, amphorae, tuns.
